We love this recipe because it’s so easy to prepare but looks fabulous and offers that extra special finesse that shows maman she’s loved and appreciated. It’s délicieuse and bright, parfait for a refreshing start to Mother’s Day.

Crêpes aux Fraises Recette

Notre recommandation: For a truly effortless morning, make the batter the day before and keep it in the fridge. On Mother’s Day, simply cook the crêpes, assemble, and enjoy!

Les Ingrédients

For the crêpes

Flour 200 g

Cornstarch 50 g

A pinch of salt

Melted butter 50g

4 eggs

Milk 450 ml

Strawberry syrup 50 ml

(Option Strawberry liqueur 25 ml Strawberry syrup 25 ml)

 

For the strawberry syrup

About 10 strawberries

Sugar 200 g

Les Instructions

For the batter:

If you don’t have access to strawberry syrup, you can easily make it by chopping and mashing your strawberries in a mortar or blender.

Combine your muddled strawberries and sugar in a saucepan and heat on simmer until the sugar has dissolved and a liquid jam has formed.

Add the jam into a blender and blend until smooth. Pour through a strainer to remove any seeds. Stirring the liquid will help it strain faster.

In a separate bowl, sift the flour, cornstarch, and salt.

Add the melted butter and eggs and whisk just until combined.

Gradually add the milk and strawberry syrup (or syrup and liqueur) and whisk until smooth.

Cover and let rest for 2 hours.

For cooking:

Add a dollop of oil to a roughly 26 cm non-stick pan and use a paper towel to spread it evenly.

Ladle in your batter and rotate the pan to spread a thin layer that covers the surface. 

When the top layer is cooked and the edges start to brown and lift, flip the crêpe and cook for another minute or until lightly browned.

Repeat for the remainder of your batter.   

Serve to mum with whipped cream, sliced strawberries, and drizzled strawberry syrup for a special treat that says, “Merci!”
